This frothy, fruity punch looks like a snowdrift, but it's a very light and tasty treat. It’s perfect for sipping before a holiday dinner.
1 cup lemon juice
5 medium ripe bananas
1 cup sugar (or sugar substitute)
2 cups half-and-half cream
1 liter lemon-lime soda, chilled (diet soda works great)
1 pint lemon sherbet
In a blender, cover and process the lemon juice, bananas and sugar until smooth. Add cream; blend until smooth. Cover and refrigerate.
Just before serving, pour banana mixture into a punch bowl. Stir in soda. Top with lemon sherbet.
Note: Some folks rim their glasses with coconut, but this goes down so fast it may not be worth the trouble.
