Skillet Corn

2 tablespoons flour
2 tablespoons lard
1 tablespoon instant minced onions
2 packages of frozen corn
2 cups water
dash of cayenne pepper

In a large skillet, melt 2 tablespoons lard on low heat. Stir in flour and keep stirring until brown. Be careful not to scorch. Add minced onions and continue stirring until the pieces are brown. Add the frozen corn and stir until thawed. Gradually stir in the water.

Cover and cook over gentle heat about 5 to 10 minutes or until corn heats well, stirring as necessary. Add the cayenne pepper and salt to taste.

My Granny made the best skillet corn. Of course, she used fresh corn from the field.
