Modern Simple Orange Salad

    This recipe for Orange Salad is from the food section of our newspaper, "The Enquirer" dated Jan. 8, 2017. It is so simple but seems so tasty.

    Simple Orange Salad

    4 oranges
    olive oil
    salt and pepper
    fresh parsley or basil

    To prepare the oranges, cut off the tops and bottoms so the oranges can stand up on their own. Place the oranges on cutting board, with the cut sides down, and carefully slice off the peels. Slice the oranges into rounds and then shingle on your serving platter. Drizzle the oranges with olive oil, season with salt and pepper, and finish with the fresh herbs.

    Being that this is January you can get fresh Florida honeybell tangelos,fresh navels,and even pineapple juice oranges.the navels would be best for your salad and the tangelos for eating but you will get sloppy from the juice while eating them.

    Sounds very refreshing and healthy - plus packed with vitamin C, which at this time of year is a good thing! I found the below Mediterranean Orange Pomegranate Salad in a Yummly email today. Thought I would share as it's also an orange salad.

    • 1½ oz thinly sliced red onions (about 1 cup)
    • 25 fresh mint leaves, chopped
    • 6 Navel oranges, peeled, sliced into rounds
    • Pinch salt
    • Pinch sweet paprika
    • pinch ground cinnamon
    • Seeds (arils) of 1 pomegranate
