Harvest time was a huge, big celebration and not just in this country. There was a lot to celebrate. Harvest meant we ate for awhile longer.

Here you go @donna. This year's thread- all corn, pumpkin, apple, squash and anything else fat and ripe enough for our ancestors to bake or squirrel away welcome.

This one from a war time issue of Godey's is awesome. Seems to be a fair amount of celebrating in ingredients alone.

I remember helping Nanny in the garden! Pulling up potatoes and picking green beans (to be snapped later) and yellow squash and everything else she lovingly planted that year. She would can or "put up" the bounty shortly after. Some water bath processed on the stove, some packed for the freezer and of course, supper was especially delish on harvest nights! Fresh is best!
