Raspberry Cordial

"Crush one pound of raspberries and store into them one quart of water and the juice of two oranges; add a sliced lemon, cover, and let the mixture stand two hours. then strain, and add one pint of sugar. Cool on ice before serving. Cherry and grape cordial may be made in same way."

Blackberry Cordial

"Crush ripe blackberries and to each gallon of juice add one quart of boiling water. Let it stand twenty-four hours, stirring it a few times., strain, and add two pounds of sugar to each gallon of the liquid; put in jars and cork tightly."

Two beverages to serve during the Holidays to friends and family.

Lovely! Cordials are under-appreciated, I think. They can be a warm-up - delightful after being cold - or an appetizer, or a finisher for dinner. Some can even be used on and in desserts. Great drink! Here's a raspberry cordial:

Blackberry Cordial
Two quarts of blackberry juice, add one and a half pounds of white sugar, half ounce cinnamon, half ounce nutmeg, one fourth ounce cloves, one ounce allspice. Boil all together for a short time, and, when cold, add one pint brandy.
