This delightful cookbook, "Pumpkin Butternut & Squash" is by Elsa Petersen-Schepelern. The book contain 30 delicious recipes for zucchini and pattypans, acorn squash and butternuts and the wonderful sweet pumpkin.
The book is divided into recipes for snacks and salads, soups, vegetable dishes. rice and pasta, entrees, and sweet things.
As Ms. Petersen-Schepelern writes "there is more to a pumpkin than a lantern". Pumpkins, butternuts and all squash are much loved around the world. Besides American recipes, like pumpkin pie, she has crispy Indian pakoras from India with pumpkins, zucchinis and chiles, spicy Caribbean chips with pumpkins, plantain and sweet potato,, Japanese squash and miso soup, and Vietnamese chicken curry with pumpkin and coconut milk, and my favorite Italian pumpkin bean soup, to name a few.
This is a great book to have for those of you who love the different varieties of squash and want to prepare them in a different way.
