Baked Bananas

Remove skins from seven bananas and cut into halves lengthwise. Out in a shallow granite pan or an old platter. Mix two tablespoons of melted butter, one third cup of sugar, and two tablespoons of lemon juice. Baste bananas with one half of the mixture. Bake for 20 minutes in a slow oven and basting during the baking with the remaining mixture.

Bananas swwm to be a fragile fruit. The bananas used from the original recipe described above are probably extinct. The banana from the late 19th/early 20th century got wiped out by a fungal disease.
The bananas we eat today got salvaged somehow using early scientific methpds. How I don't know. Was it grafting other types of bananas to produce the delicious one we have today? It was something like that. Now I'm hearing there's a new fungus attacking our current bananas.
Ya better try this recipe before ya can't.
