Modern Peanut Patties

    For National Peanut Day, Sept. 13, posting recipe for Peanut Patties.

    1 cup granulated sugar
    1 1/3up light Karo syrup
    6 tablespoons of butter
    pinch of salt
    3 1/2 cups blanched roasted peanuts

    Boil in saucepan to 235 to 238 degrees. Remove from fire and stir in peanuts. Drop from spoon into patties on buttered slab or cookie sheet. When cold wrap in waxed paper.

    Makes about 45 patties.

    For national food days, we always have posts from nitrofd. I haven't heard from him in several days and am worried. last time he and his wife were riding out the hurricane. Their electricity had gone off. I have PM him, but no response.

    If any of you hear from him please let us all know.

    It is like peanut brittle but made in patties.

    The Corn Products Refining Co. of New York and Chicago formed in May 1902. They introduced Karo Light and Dark Corn Syrups.
