I know, it's only January, but I came across my bestest and easiest and reminds me of summer time yummy muffin recipe ever and I thought it might be a great pick me up for those of us that can't wait for warm weather and peach season to get here! Makes 12 and you can use fresh or canned peaches (batter works well with other types of fruit too)! Preheat over to 350. Grease muffin tin or use liners. 1 1/2 cup all purpose flour 1 1/2 tsp. baking powder 1/2 cup butter, melted 3/4 cup sugar 1 egg 1/2 cup sour cream 1 tsp. vanilla extract 1 cup chopped peaches (if using canned, drain well) Topping: 1/4 cup brown sugar, 1 Tbs. butter, 2 Tbs. flour. Mix together dry ingredients then add wet. Do not over mix. Divide evenly into muffin tin. Crumble topping over each muffin. Bake 20 to 30 minutes.
