Old Fashioned Rice Muffins

This is an old recipe from Garden Club member in Murfreesboro, Tennesseea. Muffins and breads made with rice were easy to make and served a lot in these areas of South.

1 cup cooked rice
1 cup milk
2 eggs, well beaten
5 tablespoons melted butter
1/2 teaspoon salt
1 tablespoon sugar
3 teaspoons baking powder
1 1/2 cups flour

Combine all ingredients. Stir lightly. Drop into greased hot muffin rings. Bake at 425 degrees for 30 minutes. Serve hot.
 
Great recipe Donna. I have a rice muffin recipe that is very similar and it was very helpful when I was a young bride trying to manage the family food budget. Left over rice from supper easily became rice muffins for breakfast. I would always add any extra spices I had on hand like a little cinnamon. One time I even added some mini chocolate chips and they were a nice treat for dessert!
 
Thank you Donna. Yes, we are safe. The smoke is filtering down in our area now. It is so terrible to see such destruction in our state.
I made rice yesterday for lunch. I think there is enough left over for some muffins if my husband doesn't get into it today!
