November 14 National Guacamole Day

Guacamole isn't just for chips! It can be what's for breakfast:

This is guacamole and chorizo on cornbread pancakes with green chilies in them! :hungry: I've made this breakfast and it's quite good indeed.

This recipe calls for cilantro in the pancakes - that's very good, too.

There are as many ways to make guacamole as there are people, but my standard recipe for myself and husband is:

1 hass avocado
Generous spoonful Mrs. Renfro's green salsa (this is roasted jalapeño purée)
About 1/4 finely diced white, sweet onion
Lime juice to taste
Garlic salt to taste
Several drops roasted sesame oil

Optional: If you have fresh cilantro, chop and add

Mash with fork until it's the consistency you like.

If you're going to leave guacamole out at a party or store for later, be sure to use plenty of lime juice (lemon will do) because the acid keeps the fruit from browning. The sesame oil is non-traditional but really ups the flavor.
 
I like Mexican food but will not touch guacamole. It's all about the color for me. That puke green just is a turn off for me, and I'll eat anything I got the physique to prove it.

Cinco de Mayo is national Corona day :smile:
