Before the Civil War peaches were being grown in Michigan. During the Civil War peaches were a major crop on the west coast of Michigan shiploads were sent to Chicago. It was claimed that the unique weather conditions resulted in some of the finest peaches in United States. What was the way most people ate peaches? Transportation of peaches (they bruise like a peach) may have limited the use of peaches in some areas of the United States.

There are a number of recipes for pickled and brandied peaches, both of which would keep well. Here, as an example, are some recipes from The Kitchen Directory and American Housewife (1846)
