Lebanon bologna was developed by the Pennsylvania Dutch of Lebanon County, Pennsylvania prior to the 1780s and was a common item by the early 1800s, reflecting the slow-cured and smoked sausage traditions of Western Europe.

Is there any written evidence of lebanon bologna going to war with the Civil War soldier?
 
Croghan Bologna is a world famous North Country tradition that began in 1888 when Fred Hunziker, a Swiss immigrant, brought this smoked beef recipe with him to Northern New York. The bologna is produced by the Campany family at their Croghan Meat Market in Croghan

Fred Hunziker was my great x3 grandfather which is probably why I'm partial.
