To Make Green Tea

From “The Great Western Cook Book, or Table Receipts, Adapted to Western Housewifery”, By Anna Maria Collins, 1857

Scald your tea-pot, put in two tea-spoonsful of tea to a quart of water, let it stand a few minutes in the hot tea-pot before you fill up. This is considered a good way; or, you can pour on a tea-cup of boiling water, and let it steep; this an old fashion, and the one I have always followed in making tea. Tea is never better for standing over fifteen minutes.
