Curried Chicken is popular in India, South Asia and the Caribbean. In 1800s it came to North America via British sea captain who was stationed in Bengal, India. He served it to some friends from Savannah, Georgia. It became known as "Country Captains", for the officers in India.

In 1940 a Mrs. Bullard served this Country Chicken to President Franklin Roosevelt and General George Patton. Roosevelt liked it very much. This was in warm Springs, Georgia. It became popular in cookbooks and with Junior League Societies.

A recipe for curried chicken is found in "Miss. Leslie's Complete Cookery",1851. She calls it "a genuine East India receipt for curry".

So for National Curried Chicken Day, take some chicken and add curry for a East India treat.
 
Easy Recipe for Creamy Curried Chicken

1 1/2 cups uncooked instant rice
1 pound boneless skinless chicken breasts, cut into 1 inch pieces
2 teaspoons curry powder
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped onions
1 tablespoon canola oil
1 can (13.66 ounces) coconut milk
2 tablespoons tomato paste
3 cups fresh baby spinach
1 cup chopped tomatoes

Cook rice according to package directions. Meanwhile, sprinkle chicken with curry, salt and pepper. In a large skillet, saute chicken and onion in oil until chicken is no longer pink.

Stir in coconut milk and tomato paste. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until thickened. Add spinach and tomato; cook 2 to 3 minutes longer or until spinach is wilted. Serve with rice.

Makes 4 servings.
