History of Candy Canes

I usually hang on to some Christmas candy canes to crush them up and mix them into a good vanilla ice cream.

The Frugal Gourmet has a good cookie stuffed with cream cheese and crushed candy canes that tastes pretty good but is a real pain to make. Pillsbury has a good peppermint cheesecake bars recipe that is dead easy (and uses Oreos in the crust) that I ought to make again this year. Although I'm kind of considering these Peppermint Cheesecake Brownies instead.

Candy Cane Fudge Recipe

2 (10 ounce) packages of vanilla baking chips
1 (14 ounce) can sweetened condensed milk
1/2 teaspoon peppermint extract
1 1/2 cups crushed candy canes
1 dash red or green food coloring

1. Line an 8 inch baking pan with aluminum foil, and grease the foil.
2. Combine the vanilla chips and sweetened condensed milk in a saucepan over medium heat. Stir frequently until almost melted, remove from heat and continue to stir until smooth. When chips are completely melted, stir in the peppermint extract, food coloring and candy canes.
3. Spread evenly in the bottom of the prepared pan. Chill for 2 hours and then cut into pieces.

Wow wish I had spotted this before Christmas and before all the kids had eaten all the candy canes!! Mmmm I love anything to do with fudge!
