Happy Mardi Gras Day

I'm on a diet but couldn't let Fat Tuesday pass without doing something a little fun - so I invented King Cake Cabbage. My husband says I really should have photographed it - it came out looking amazing! Just some purple cabbage lightly sautéed in a little olive oil, mixed with an equal amount of bright green kale, sautéed separately, then with a little lemon juice, salt and pepper, shake of roasted paprika, and a lot of shreds of lemon zest mixed in. Next to no work, five whole ingredients and hardly any calories, looked and tasted festive.

Supper was inspired by this gumbo, which I mixed up a little. Putting gumbo over roast potatoes was something I never did before, but it was delicious.
