Authentic Easter Roast Lamb

Roast lamb is the traditional dish on Easter Sunday around here and tomorrow will be no different. I love mine with springs of rosemary, garlic & anchovies in it but unfortunately certain members of the family like plain cooking so plain it is. I'll roast it straight up with salt and pepper, served with potatoes, carrots, peas & mint sauce. A simple but tasty meal for the special day.

I love lamb too. Hard to get near us. They did have some lamb chops the other day at our grocery.

The meal made from the leftovers was nearly the nicest part. I'd recommend the Lancashire hotpot to fans of lamb.
