Chasseur Chicken is still a popular dish but how did soldiers cook chicken during the Civil War? It would seem like Civil War Zouaves would cook their chicken French style So did German Americans cook Jägerschnitzel in the field. What exactly is the difference between the sauce used in Jägershnitzel and that used in Chasseur sauce?

I have not a clue as i've never had Chasseur Sauce.

Chasseur sauce or also called hunter's sauce is a simple or compound brown sauce used in French Cuisine.

A recipe for the sauce is at: https://www.thespruce.com/chesseur-sauce-recipe-996086

As to how they prepared chicken in 1860s, they fried it, roasted it, baked it, and fricasseed it. They used chicken in soups, broth, stews and also made chicken salad. There are many recipes for chicken on the forum. Many are authentic to the period.

I haven't found reference to Zouaves and Chasseur chicken yet.
