What a wonderful day! I love chocolate by itself or covered over other foods or in cakes, or candies.

A favorite for my husband and I this time of year is Chocolate Covered Cherries.

1/4 cup butter, softened
2/3 cup sweetened condensed milk
1 (16 ounce) package powdered sugar, sifted
pinch of salt
1 cup flaked coconut
2 (6 ounce) bottles maraschino cherries
12 ounces chocolate flavored candy coating

Cream butter, add condensed milk, powdered sugar and stir, beating well. Stir in coconut; cover and chill at least 2 hours.

Drain cherries, and dry thoroughly on paper towels. Shape a small amount of the sugar mixture around the cherry. Place on wax paper lined baking sheet; chill about 2 hours or until firm.

Place candy coating in top of a double boiler; bring water to a boil. Reduce heat to low; cook until coating melts. Dip each covered cherry into melted coating. Place on wax paper to cool. Store in cool place. Yield: 4 dozen.

Chocolate Ginger Balls

1 8oz. pkg. cream cheese
2 c. crushed ginger snap crumbs
candied ginger
dark chocolate for coating

Cream cream cheese, mix in ginger snap crumbs. Cut candied ginger into small pieces and shape about 1 Tbsp of ginger snap mixture around each piece. Chill.

Melt chocolate and dip each ball. Let chocolate set, and store in refrigerator.

Okay, chocolate is good. Bacon is good. Caramel is good. This does not mean that in combination all these things are good, or indeed should be put together. As for the chocolate covered vegetables, just NO!
