September is Rice Month. Found this old recipe in current issue of "The Kentucky Explorer".

Curried Chicken with Rice

Clean and dress a three pound chicken and cut in pieces for serving. Put one third cup of lard in a hot frying pan, add chicken, then cook for ten minutes, tightly covered. Then add liver and gizzards, continue cooking for ten minutes longer. Cut two medium sized onions into thin slices, add to chicken with two tablespoons of salt and one tablespoon of curry powder. Add sufficient boiling water to cover, and simmer until chicken is tender. Remove chicken, strain the juices, then thicken it with a mixture of flour and water. Make a border of boiled rice around the platter or serving dish, arrange the chicken in the center, pouring the curry sauce over it.
