Cream of Onion Soup

We supposed to have frost here in our part of Florida. Been thinking about different soups to make. This cream of onion hits the spot.

2 tablespoons quick cooking tapioca
2 tablespoons butter
1/4 cup grated cheese
4 cups milk, scalded
2 tablespoons minced onions
2 1/2 tablespoons chopped parsley
salt and pepper

Combine onions, tapioca, and milk. Cook over hot water until tapioca is clear. Add butter, cheese and parsley. Season to taste. Cook until cheese is melted. Serve at once.

This is easy to make and very tasty.
 
Onion soup is a favorite of mine and this recipe looks especially good because it calls for milk. Clear Onion Soup usually requires beef stock for which, as a vegetarian, I have to substitute vegetable stock. The clear soup also calls for broiling the soup and cheese which is a bother (IMO).
