Cowboy Cookies are said to be a cookie that cowboys on the trail enjoyed. They were considered the first power bar. They were a quick and easy way to get nutrients for the long travels that cowboys made. They also kept well.
Recipe for Cowboy Cookies from 1950s.
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking power
1 cup margarine or butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 cups rolled oats
1 teaspoon vanilla
1 cup chocolate chips
Blend margarine and both sugars. Beat in eggs until fluffy. Sift and add dry ingredients, mix well. Stir in oats, chips and vanilla. Drop by spoonful on greased cookie sheet. Bake about 15 minutes at 350 degrees.
