Recipe for Corned Beef

Twelve pounds of salt
two pounds of sugar
four tablespoons full of salt petre
to eight gallons of water
6 pods of red pepper

Boil the whole; skim carefully let it stand until perfectly cold, cut up the beef, salt it lightly, and let it lie a day or two to drip, pack it in a clean water tight barrel, and keep it covered with brine. Twice the quantity given will pickle large beef.
