Calumet's Happy Day Cake

This recipe for cake is from old can of Calumet Baking Powder. It probably from 1920s. It was simple cake my Granny made.

2 1/2 cups sifted flour
3 teaspoons calumet baking powder
1 teaspoon salt
1 1/2 cups sugar
1/2 cup shortening
2 eggs
1 cup milk
1 teaspoon vanilla

Put flour, baking powder, salt and sugar in s sifter, cream shortening. Sift in flour mixture, add 3/4 cup milk, beat 2 minutes on low speed, add eggs, vanilla and rest of milk, beat 1 minute. Of course back in day was beaten by hand.

Pour into two 9 inch round pans. Bake at 375 degrees for 20 to 25 minutes.
 
I love the name, Happy Day Cake! My grandmother made this too, but she added Chocolate Butter Frosting.

Frosting:

Cream 1 stick of butter and 2 cups sugar in small bowl. Beat in 1 tsp vanilla and 3 oz unsweetened melted chocolate.

Add 2 more cups of sugar gradually, beating well after each addition.

Thin with 2 Tbsp milk to reach desired consistency.

Drizzle over the cake.

Yummy! Ladies you're making me crave cake!

I picked up quite shamefully this new thing from Duncan Hines wherein it makes a cake in the mug in the microwave with a packet of mix and your choice of milk or water to stir in. It was on sale and I know it won't be as a good as real cake, but I couldn't resist because honestly sometimes you're lazy and you just want a little piece of cake.
