Flummery was another pudding type dessert which used fruit. They were made by the Colonists and continued to be made into 1800s. Different berries, such as blueberries and raspberries were used.

Blueberry Flummery

3 cups fresh blueberries (or other fresh fruit)
3/4 cup cold water
1 cup white sugar
1/2 teaspoon salt
6 tablespoons cornstarch

Preparation:

1. Wash berries in cold water.
2. Put water and blueberries in covered saucepan and cook over medium heat for about 10 minutes or until berries are soft.
3. While berries cook, measure the sugar, salt and cornstarch into bowl and stir with fork.
4. Slowly add the sugar mixture to cooked berried and stir. Turn down heat and simmer mixture for another 10 minutes or until it becomes thick.
5. Spoon flummery into dessert cups or jelly mold. Chill before serving. To serve from jelly mold, dip a small pointed knife in warm water and slide it around the rim to loosen the top edge. Place a large plate upside down on top of the mold. Hold the plate and mold together and quickly turn them over. Tap lightly on the bottom of the mold until chilled flummery slides out.

* Since cornstarch was not available as a thickener, a clear gelatin was made from calf's foot. I have posted this old recipe for making gelatin before.
