This was recipe my Granny made for supper. She said her Mother made it and she added touches of her own to it. It is a good hearty dish. She always served mashed potatoes and lima beans with it as the sides.
Beefsteak Smothered In Onions
One dozen small onions, one slice of porterhouse steak, cut thick, salt, and pepper. Heat a frying pan hissing hot. Put in beefsteak, searing first on one side, then on the other; cook five minutes; season with salt and pepper; add onions, which may have cooked one half hour in boiling salted water. Cover and simmer for 20 or 30 minutes. Remove steak to platter, spread with butter, and season with salt and pepper. Season onions with salt, pepper and butter and serve around the steak.
