Auburn Brown Stone Cake Recipe

Auburn was an old plantation mansion built in 1812 in Natchez. Many notables of the time visited this home. Some were Henry Clay, Edward Everett Hale who wrote "The Man Without a Country" and John Howard Payne author of "Home Sweet Home". This cake was served to them and others who visited.

Auburn Brown Stone Cake:

1 cup shortening
1 3/4 cups sugar
2 eggs
2 2/3 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/2 teaspoon vanilla
2 squares unsweetened chocolate, melted
1/2 cup finely chopped nuts

Cream shortening and sugar together until light and fluffy Add egg, one at a time, beating well. Stir dry ingredients together and add alternately with milk, beating until smooth. Stir in vanilla and melted chocolate. Fold in nuts. Pour batter into 10x10x2 inch pan which has been greased. Bake in 350 degree oven for 40 minutes. Cool

Chocolate topping:
2 squares unsweetened chocolate
1 cup milk
2 eggs
1 cup sugar
1 Tablespoon flour
1/8 teaspoon salt
1 teaspoon vanilla

Combine chocolate and 1/2 cup milk in top of double boiler. Heat over boiling water until chocolate melts. Beat until smooth. Beat eggs slightly and add remaining milk. Stir in dry ingredients and add to hot chocolate mixture. Cook, stirring constantly until thick. Cover cooled cake with this mixture.
