Cashews are native to Costa Rica and Central America. They are usually harvested during March and April.

The cashew is from a tree of the family Anacaidiaceal. Its English name is from the Portuguese, "Caju".

Cashews are a very popular snack. They are very good covered in chocolate.

Simple recipe:

Microwave Chocolate Covered Cashew Clusters

1 lb. semi sweet chocolate, chopped
1 cup cashews

Place chocolate in 2 quart glass measure. Cook on high 2 1/2 minutes/ Add cashews. Stir until blended.

Drop mixture by teaspoonfuls onto waxed paper. Let stand until firm. Makes 1 1/2 lbs.
