Apricots

Just found another Apricot Recipe. This one is in new edition of the "Kentucky Explorer Magazine".

Apricot Fritters

Six apricots, one half pint of syrup, one half of a lemon. frying batter in Crisco and vanilla sauce. Select firm, ripe apricots, cut them in halves, taking out stones. Stew them gently in syrup with grated lemon rind. When they are tender, drain well and let them cool. Have ready some frying batter, dip apricots into it. Then fry in plenty of hot Crisco. When a nice golden color, take them up, drain on paper, dish up on a plate, serving with vanilla sauce.
