Apples and Sweet Potatoes Casserole

This casserole has two Fall favorites, apples and sweet potatoes. It is delicious and so simple to make.


1 tablespoon lemon juice
1 1/2 lbs sweet potatoes, peeled and sliced
3 apples, peeled, cored and sliced
1/4 cup apple juice or cider
1 tablespoon melted butter

Mix apples and lemon juice. In a baking dish place a layer of sweet potatoes then a layer of apples. Continue until apples and sweet potatoes used up. Pour the apple liquid over top and dribble on the melted butter.
Cover and bake for 1 hour at 350 degrees. Uncover and bake an additional 15 minutes.
 
That does sound good. About how many servings is that? (easier to calculate the carbs).
 
I learned to cook apples with vegetables in Scotland: mashed apples mixed with mashed carrots or with mashed potatoes. A friend in Maine showed me how wonderful apples are fried with onions and mixed with just about any vegetable. But I've never tried them with sweet potatoes or yams--something to look forward to!
