This recipe is from Marianna Becker, Hospitality Homemakers of Boone County, Ky. It is in book, "Kentucky Favorites".

1850 Riz Biscuits

3 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon baking soda
1/4 cup sugar
1/3 cup shortening
1 package quick yeast
1 cup buttermilk

Sift flour, salt, soda and sugar together. Cut in shortening. Dissolve yeast in buttermilk (or substitute warm 1 cup milk and 1 tablespoon lemon juice to 110 degrees and let stand a few minutes). Then add buttermilk to flour mix and beat until smooth and creamy. Cover bowl and let stand in a warm place for 10 to 20 minutes.

Turn out onto a floured surface and knead until smooth and bubbles rise to the surface. Cut with a biscuit cutter. Place on lightly greased cookie sheet. Brush with melted butter. Let rise for about 1 hour in a warm place. Bake at 375 degrees for 15 to 18 minutes.

Makes 18 biscuits.

When I saw this, I thought it was a typo for "Ritz". Then thought it must have rice in it. Then saw the yeast and got it! I have a similar recipe with yeast, called" angel" biscuits, presumably because they are light as angels?

Angel Biscuits are very popular in the south. My Granny made them all the time.

Angel Biscuits

1 package yeast and 2 tablespoons lukewarm water. Dissolve yeast in water
1 cup vegetable shortening
2 cups buttermilk

Sift together the following:

5 cups flour
1 teaspoon soda
3 teaspoons baking powder
1 1/2 teaspoons salt
2 tablespoons sugar

Cut dry ingredients into 1 cup of shortening. Add 2 cups buttermilk and yeast mixture. Stir until moistened. Turn on floured board and knead for a minute or two. Roll out and cut into rounds. Bake at 400 degrees for 12 to 18 minutes.

Recipe from Hazel Tritsch, Hospitality Homemakers, Boone County, Kentucky. This recipe in cookbook, "Kentucky Favorites".
