a ham bone / General Ambrose Powell (A.P.) Hill

Source: General A.P. Hill: The Story of a Confederate Warrior By James I. Robertson, Jr.

bonus : Brig. Gen. M. Jeff Thompson (1826-1876). Being in the Missouri State Guard throughout the war, despite several petitions his rank was never confirmed in the Confederate States Army. Famous for irregular cavalry warfare, he was nicknamed "Swamp Fox of the Confederacy". Later in the war he commanded the (formerly Shelby´s) Missouri Iron Brigade. In 1862 a cottonclad ram was named for him but it was destroyed the same year during the Battle of Memphis.

Edit - I'm amazed at the number of people who got the answer to the main question right. We must have a lot of A. P. Hill fans playing the trivia game.
