Cowboy Cookies are said to be a cookie that cowboys on the trail enjoyed. They were considered the first power bar. They were a quick and easy way to get nutrients for the long travels that cowboys made. They also kept well.

Recipe for Cowboy Cookies from 1950s.

2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking power
1 cup margarine or butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 cups rolled oats
1 teaspoon vanilla
1 cup chocolate chips

Blend margarine and both sugars. Beat in eggs until fluffy. Sift and add dry ingredients, mix well. Stir in oats, chips and vanilla. Drop by spoonful on greased cookie sheet. Bake about 15 minutes at 350 degrees.
 
The recipe for Cowboy Cookies came from Church Cookbook, "Family Favorites", Richmond United Methodist Church .This church is in Richmond, Ohio. I did research and they were a favorite cookie in 1950s. Quaker Oats had recipe for them on bottom of their lid on Rolled Oats.

After researching Cowboy Cookies, they mentioned Ranger cookies. I then got recipe for them off internet.

Also both cookies are famous in Texas. Laura Bush has recipe for Cowboy Cookies.

Sounds very similar to modern day Oatmeal Chocolate Chip cookies I make. I like Laura Bush's version with pecans for sure as I'm a sucker for pecans. The baking wheels are turning in my head :cool:
 
Those Cowboy Cookies sound excellent. Sign me up for a few dozen at least. I can be very careful with cookies, and I would enjoy them. Easy to substitute the sugar, and still just as good to me. Thank you @donna thanks for helping to fill out those holiday treats menu.
