This variation on corn muffins is from the Pennsylvania Dutch. I found recipe in "Home Sweet Home Pennsylvania Style Recipes" published by the Pennsylvania Department of Agriculture.

Blueberry Corn Muffins

1 cup all purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups fresh blueberries
1 egg
1/2 cup buttermilk
1/2 cup butter, melted

Preheat oven to 425 degrees. Grease muffin tins. Mix dry ingredients in large bowl. Stir in blueberries. Beat egg, buttermilk and melted butter in medium bowl. Add to flour mixture and stir until flour is moistened. Spoon into muffin tins, filling 2/3 full. Bake until golden, about 20 to 25 minutes. Serve warm.

Makes 12 muffins.

My grandmother and mother used this same recipe for blueberry muffins as well as corn muffins. Both recipes are tremendous with a nice hot bowl of chili. Thanks for sharing this recipe Donna. David.
 
Will have to try them!! I love blueberries, specially fresh ones when in season from NJ or NC. The ones in the grocery stores now are from Chile so at least a week or two old already before they even get to the U.S. I make the blueberry muffins with the Bisquick mix which are ok, but since I like baking my own cornbread with the Indian Head yellow cornmeal, I'll give this recipe a try. I may use whole milk instead of buttermilk. The PA Dutch have some great recipes. Also some great produce at their farmer's market stores. Breads, pies, cobblers, jams, jellies, sauerkraut, sausages, scrapple, liverwhurst, goat cheese.....Blueberries are an expensive fruit. I've never tried to grow them. I do great with my blackberries every year however. They can be expensive as well bought in the store. Like butternut squash and strawberries. So easy to grow everything yourself and save $$$ and not have to worry about pesticides and e-coli bacteria etc.

I adore blueberry muffins .. so I’m just gonna have to give this one a go! One question, what is all purpose flour? We only have plain flour or self raising flour! I’m prob just being a bit dumb here!! :giggle:
