Ham Bone soup is a very hearty soup that dates from Colonial times in Virginia. It is wonderful to serve in this cold weather we have been having.

Ham Bone Soup

1 quart fresh or canned tomatoes
1/4 teaspoon pepper
4 medium potatoes, cut in cubes
1 small head of cabbage, shredded
1 ham hock with meat or ham bone, plus 1 lb. ham scraps
3 quarts of water
3 onions, chopped
dash cayenne
salt to taste

Boil ham in water with onions and pepper. If ham has been cooked, 2 hours are sufficient; if not, 3 hours. Add potatoes and cabbage and tomatoes and simmer an additional hour. Skim off excess fat before serving. Add salt to taste as ham can be very salty and not need any additional. Serve hot with corn bread.
