Cauliflower is one of those forgotten vegetables by many. I love cauliflower. This recipe is from "Old Time Recipes To Enjoy", "The Kentucky Explorer Magazine", September 2016.

Buttered Cauliflower

Buttered Cauliflower

"One medium-sized head of cauliflower and two tablespoons of butter. Remove all the green leaves and place the cauliflower head downward in cold water to which has been added one tablespoon of salt to each quart of water. Let soak one half hour or more, to draw out any inspects that may have found their way into the flowerets. If the head is to be cooked whole, tie it in a cheese cloth to prevent breaking. Boil in salted water for 20 to 25 minutes, or until tender, taking care not to cook longer than necessary. Drain and dress with melted butter. Cauliflower is more quickly cooked if broken into flowerets."
I am a big far of Caulifower,sometimes my wife will cook it up then mash it and put it a baking dish covered with cheese on top.an awesome side dish.
 
Cauliflower is so under used in cooking these days. It's really a great veggie and is great not only buttered or with cheese, but I've had excellent dishes of it mashed with garlic and some kind of creamy sauce when out at a restaurant once.
 
Cauliflower is a much underrated vegetable.

  2. Press or chop garlic and let sit for 5 minutes.
  3. Heat 5 tbs broth in a stainless steel skillet on medium heat.
  4. When broth begins to steam, add cauliflower and turmeric and cover. For al dente cauliflower, cook for no more than 5 minutes.
  5. Transfer to a bowl. For more flavor, toss cauliflower with the remaining ingredients while it is still hot. (Mediterranean Dressing does not need to be made separately.)
