The lemon sucking Jackson is a myth. He actually prefered Persimmons.
In most books that refer to Jackson and his lemon sucking they seem to all use the same source. Richard Taylor's Destruction and Reconstruction.
It seems that Jackson and his men had captured a Union suppy train, with at least 1 wagon carrying fresh fruits. After Jackson had helped distribute the fruit to his men, he found there were only lemons left and helped himself to one. And as he did so, Richard Taylor rode up. This incident was added to Taylor's diary and became the basis of the 'Jackson loving lemons' story.
